And just like that, it's time for a new Ethiopia Limited. Of all the limited edition coffees that we offer, it's Ethiopia that we run through the fastest. And it's no wonder! The sheer number of indigenous varietals available from Ethiopia is unmatched. So many coffees, so little time. Well, this next one's quite a sprightly addition that's sure to jazz up your coffee routine. We present to you Ethiopia Idido Ajere.

This is another stunner out of the world-famous Yirgacheffe region. The coffee producing competition here is fierce; everybody's growing coffee. It's often grown on small family-owned lots, right near their own vegetables. At harvest time, they gather at the nearest washing station that will give them the best price on their crop. The Ajere washing station, known as just "Ajere," is one such washing station that serves over 850 local small coffee producers in the Ajere community.

Coffees from this region are reportedly "beguilingly ornate and jasmine-like." While we didn't identify jasmine on this one, it was surprisingly lively, and yet delicate. Notes of black tea, citrus, and lavender do quite impishly dance on the palate, however, so we agree on the "beguilingly ornate" bit.

Roasted to Full-City Medium, we recommend a pour-over method and espresso, believe it or not. Drip or French press is delicious, but we think the pour-over and espresso shot had the most impressive flavor expression and body. We haven't tried it, but we have a sneaking suspicion that this would be a fantastic cold brew.
