El Salvador Black Honey LTD

We have been anticipating this delivery for a minute. And it's finally arrived! A first for us, our latest El Salvador LTD is an anaerobic black honey process.
El Salvador is one of the smallest countries in Central America. However, each year, El Salvador produces hundreds of thousands of tons of green coffee. Tropical jungles create the perfect atmosphere for happy, productive coffee trees- ambient humidity, protection from direct sunlight and wind by shade trees, and of course, (tremendously important) biodiversity.
Tucked among hills that ancient Mayans once called home, Finca Lemus Bella Vista is located in the municipality of Concepción de Ataco within the department of Ahuachapán, El Salvador. This estate is owned and run by the Gutierrez husband and wife team, Thelma and José Gutierrez.

Both come from coffee farming stock. This 37 acre farm benefits from their experience as third generation coffee producers by their focus on improving the productivity and health of the farm. Some of these methods include production and application of microbial compost teas and incorporating growing beans as well. This helps not only feed their family, but also fix the nitrogen in the soil for future coffee tree production.
You can taste the love and care that went into producing this coffee. This is a Black Honey process coffee, meaning that once the coffee cherries are harvested, most of the fruit is removed. What's left is a little bit of the mucilage from the fruit. The cherries are then left to dry, but constant monitoring and rotation is required because of the humidity. Achieving the Black Honey stage takes the longest amount of time, sometimes as much as two weeks to dry properly. A final rinse and dry will often leave a coffee bean with floral or honey notes, along with a little more viscus texture.
